3 animes come to mind
1. Dragonball Z - made me want to learn the Japanese language so bad, which I eventually did dahil sa magandang opportunity. dahil dito, puro japanese language-related na lahat ng trabaho ko
2. Initial D - turned me into a car enthusiast at one point. PSN ID.
3. BECK - changed the way I approach music and made me play the guitar more seriously... until I got married, wala nang time sa banda

related item, it's Bible Black.
It showed that such genre can have it's high quality level of artwork. I don't think anything can top Bible Black.

Going with the thread title my only answer is Code Geass. I watched alot of old animes though I haven't watched alot of the newer ones but I never saw an anime that has this superb/unique protagonist, plot, character development, execution, yeah everything. It portrayed harsh realities that our real history supports, no wonder it received alot of positive feedback.

The best for me is still Hunter X Hunter. It's an anime that both my younger and adult self still feel pulled to. I have never found any other anime as deep, mind bending and profound as HxH. For me, it's not just an anime with fancy moves, it's a psychological trip.
I have this childhood fantasy that has persisted up to now, even all these years: Piloting a Gundam. Wouldn't it be cool to sit at that cockpit? It's all due to watching Gundam Wing. For me, still the best Gundam in the franchise series. It's old, I admit, but still the lesson lingers.. in war, it's the children that suffers most.

Dragon Ball Z at Peter Pan no Bouken nung elementary days. Ranma 1/2, Samurai X, Fushigi Yuugi, Slam Dunk, Ghost Fighter nung Highschool. GTO, Chobits nung college. Tapos matagal akong hindi sumabaybay ng anime from 2002-2008 until I watched Toradora on TV5, na-hook ulit ako sa Anime.
Loneliness has followed me my whole life. There's no escape. I'm God's lonely man.
